• 2 Cups Shredded Sweet Potato
  • 1 Cup Shredded Parsnip
  • 1 Cup Shredded Beets
  • 1/2 Cup Finely Chopped Onions
  • 1 TSP Sea Salt and Black Pepper
  • 2 Eggs
  • 1 Cup Coconut Flour
  • 1/2 Cup Almond Flour
    • (or you can just do 1.5 cup coconut or almond flour by itself)

Step 2: Make the Recipe

  1. Mix the sweet potatoes, beets, parsnips, and onions together in a large bowl
    1. Sprinkle Sea Salt and Black Pepper while mixing
  2. In a bowl, scramble eggs then mix with the root veggies
  3. Mix in the flour
  4. Heat a skillet with avocado oil or pure lard
  5. The pancakes soak up a lot of oil so be prepared to keep adding more
  6. Cook on both sides for 2-3 minutes. I covered the skillet while cooking.
